Spring and Spice: Taste the season at Z’Tejas

May 1, 2012

This spring Z’Tejas Southwestern Grill has a variety of delicious new items on their menu cooked up by the new Executive Chef Derek Stewart. Stewart was the chef at the former Manzana restaurant and was the executive chef who opened Palomino. Stewart graduated from the Art Institute of Seattle’s Culinary Program and has been hard at work conjuring up the latest dishes at Z’Tejas.

Begin a warm spring evening with the infamous Z’Tejas cornbread, followed by a spicy appetizer such as the Green Chile Pork Nachos made with tender pork simmered in green chiles and ancho peppers with tortilla chips, melted jack cheese, borracho beans and fresh jalapeños, served with guacamole. This meaty dish is great to share with friends – we’ve tested!

The new Ahi Chipotle Citrus Bites (pictured above left) are the perfect finger food, made with ahi tuna, mango, jicama atop a crispy tostada round to give it a little extra pop of Southwestern flair, is topped with avocado wasabi aioli

The Tamari Tuna dish makes for a delicious dinner. The ahi tuna is a very beautiful fish that is rolled in black and white sesame seeds seared and served atop an unexpected sweet tamari cream sauce with filling, green chile rice and veggies.

If seafood   really your thing, try the Peppercorn Crusted Filet, topped with roasted mushroom herb demi-glace, tasty scalloped-potatoes and grilled vegetables

If you still have room for more, try the Ancho Fudge Pie made with rich and creamy chocolate filled with walnut pieces for a little extra crunch.

Z’Tejas has also introduced some new specialty cocktails, just in time for spring. The Blood Orange Paloma Solerno made with Blood Orange Liqueur, St-Germain Liqueur, POM Wonderful, Sprite®, club soda, with a float of Milagro Silver Tequila. And the Solerno Sunset made with Solerno Blood Orange Liqueur, Milagro Silver Tequila, pineapple and lime juices with muddled raspberries. Last but not least Bud Light Platinum.

Whether you’re in the mood to try something new or get your fix of spice and Southwestern flavor, Z’Tejas’ new spring menu is bound to satisfy your tastebuds.
